Cabbage is a superfood with lots of nutrients! Did you know that it is known for healing stomach ulcers and preventing cancer (particularly colon cancer). This is a simply, yet delicious recipe for unstuffed cabbage rolls. There are two versions, soupy and upsoupy. LOL basically, If you want it less "soupy" you need to add 1 c. of (uncooked) rice and it will absorb the extra water (& extend the servings., making it even more budget friendly!) Ingredients: 1 1/2 to 2 pounds lean ground turkey 1 tablespoon oil 1 large onion, chopped 1 clove garlic, minced 1 small cabbage, chopped 2 cans (14.5 ounces each) diced tomatoes 1 can (8 ounces) tomato sauce 1/2 cup water 1 teaspoon ground black pepper 1 teaspoon Himalayan salt Cayenne Pepper optional Heat the Olive oil in a Big Skillet (use medium heat) Saute the onions until tender, and then add the ground beef (or turkey) until the meat is browned. Add the garlic, cook an additional minute before adding the remaining ingredients. (This is the point you would add the rice Bring them to a boil, Cover, reduce the heat and simmer about 25 minutes (or until the cabbage is quite fork tender) Yield: Serves 6 to 8 Simple. Easy. Quick. Healthy. Ingredients: Ground turkey Peppers (red, green, Yellow, orange) Green Beans Spicy Chipotle hummus Whole wheat crust Preheat oven to 350 1. dice the peppers 2. brown the turkey 3. add the peppers and green beans 4. either use different seasonings, olive oil or packet of McCormick marinade 5. cook for 5-10 minutes 6. spread the whole wheat crust with hummus 7. top the crust with the ground turkey and pepper and bake for 10 minutes or until crust is browned Options: different flavor of hummus, add cheese, onions, garlic, tomatoes ENJOY!!!!
For an extra treat melt about 2 Tbsp of butter; dip the tops of the muffins in the butter and then into some white sugar to make the muffins sparkle. Into a large bowl mix:

Turn the dough onto a lightly floured surface. Knead in enough remaining flour to make moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Cover and let dough rise until nearly double in size (about 1 hour). Punch dough down. Cover; let rest 10 minutes. Grease a baking sheet. Divide dough in half. Divide each portion into 8 pieces. On a floured surface, roll each piece into a 12-inch-long rope for thin, crispy sticks or into a 6-inch-long rope for thick, chewy sticks. Place 2 inches apart on prepared baking sheet. Cover; let rise until nearly double in size (about 45 minutes). Preheat oven to 425 degrees F. Beat together egg white and 1 tablespoon water until frothy. Brush over breadsticks. Sprinkle with coarse salt. Bake about 10 minutes or until golden. Remove from baking sheet. Cool on wire rack. Makes 16 breadsticks. Kitchen Tip: Peanut sauce will keep for up to a week in a refrigerated airtight container. But remember to take the sauce out of the fridge about 30 minutes before serving to let it come to room temperature: know how stubborn peanut butter can be. |
